Thick Noodle Soup with Fish Cakes (Bánh canh)

You can find thick noodle soup with fish cakes everywhere in Vietnam but trying the one in Phu Quoc is extraordinary. Banh canh in Phu Quoc is famous for its chewy, crispy fish cake which is made from mackerel and well-seasoned. Local people in Phu Quoc made the broth from simmered mackerel bone, pig bones, and minced pork. Additionally, thick noodle is made from rice flour, so that its texture is bouncy, soft that will melt in your mouth.
